My research group develops 'Intelligent/smart packaging' with a goal to improve food safety and minimize food waste in India. In this research, our group is developing non-invasive way of real time detection of food freshness in which colorimetric indicators and radio frequency identification (RFID)-based sensors are main focus.
Our group is also working on application of novel nonthermal technologies such as UV light for surface sanitization of perishable food surfaces for the enhancement of microbial food safety. We are also applying mathematical models for better understanding of behavior (inactivation and growth) of microorganisms in food system during several food processes.
